  • 1 teaspoon Worcestershire sauce
  • 2 (250g) pork loin cutlets
  • 1 teaspoon dried rosemary

  • salt and cracked black pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 large white onion, finely chopped
  • 1/2 teaspoon minced garlic
  • 1 red apple, sliced

  1. In a bowl, lightly whisk together your maple syrup, balsamic vinegar, mustard and Worcestershire sauce until the mustard dissolves. Put to one side.
  2. Rub the both sides of the pork chops in rosemary, thyme, salt and pepper. Heat up a tablespoon or so of olive oil in a deep pan and start cooking your pork on a medium heat. Cook until browned on the outside and white throughout, about 6 to 8 minutes each side depending on thickness). Add in your onion and garlic and fry for a further 2 minutes until the onions begin to brown and soften. Drain away if too much moisture collects in the pan.
  3. At this point add in maple mixture and apple slices. Give everything a good coating and reduce to a simmer until the sauce thickens and the apple slices soften, about 10 to 15 minutes.
  4. Serve on a bed of heavily seasoned buttery mash, next to some steamed green beans.

Sticky Maple-Glazed Pork Chops

  • 8 pork chops, bone in, around 225g each
  • For the Marinade:
  • 150g dark brown sugar
  • 6 garlic cloves, crushed
  • 1tsp hot chilli powder
  • ½tsp ground black pepper
  • 1tsp celery salt
  • ½tsp cayenne pepper
  • ½tsp ground cinnamon
  • 100ml cloudy apple juice
  • 2tbsp cider vinegar
  • 6tbsp maple syrup
  • 4tbsp barbecue sauce

Method

Step 1

Mix together all the ingredients for the marinade in a large ovenproof dish (about 25 x 30cm) that will hold the chops in a single layer. Turn the chops in the mixture to smother them in the sticky marinade, cover and chill for at least 4 hours or overnight.

Step 2

Preheat the oven to 180°C, fan 160°C, gas 4. Uncover the chops and put the dish in the oven to bake for 1½ hours until the meat is tender but not quite falling from the bone. Turn the chops a couple of times during cooking. Remove from the oven and leave to cool in the sauce until ready to cook.

Step 3

Sticky Maple Pork and Apples

The sauce for the sticky maple pork with apples was definitely on point, but, as it turns out, the real clincher was that I had used “pork for pork stew” instead of chopped pork loin, which made it tough as heck and almost impossible to eat — although my boyfriend happily packed it away for the next day’s lunch, declaring, “awesome!”

  • ½ cup chopped onion
  • 4 raw chop with refuse, 113 g (blank) 4 ounces (1/2-inch thick) pork chops
  • ½ teaspoon salt
  • ground black pepper to taste
  • 2 medium (2-3/4" dia) (approx 3 per lb)s apples - peeled, cored and sliced
  • 2 tablespoons brown sugar
  • ½ teaspoon ground mustard
  • ⅛ teaspoon ground cloves
  • ¾ cup hot water

Preheat oven to 375 degrees F (190 degrees C).

Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.

Place chops in an 8x12 inch baking dish and sprinkle them with salt and pepper. Cover the chops with the apples and cooked onion.

In a small bowl, combine brown sugar, mustard, cloves and water. Pour over chops. Cover and bake in the preheated oven for 30 to 45 minutes. Enjoy!


Sticky Sweet and Spicy Pork Chops

Just like chicken, pork chops are simple and quick meat to cook up for a weeknight meal. I usually throw some spices in a dry rub fashion and pan fry the chops (sometimes finishing them off in the oven) till they’re juicy and tender. That’s when I don’t plan ahead. This time since I knew I wanted to do a recipe, I decided on marinating my pork chops in an asian inspired almost bbq sauce. But, even if you didn’t marinate these ahead of time, they’d taste great and a quick fix meal option for sure.

I’m not a big fan of sweet foods, but my husband and daughter are. So I tried to make a sweet and spicy balanced marinade to make everyone happy. And it turned out great. It wan’t overly sweet nor spicy which made them perfect for a family dinner. Using a grill pan I gave my chops some good grill marks and a charred flavor and then popped them in the oven to cook through evenly. I also basted the chops throughout the cooking process to keep them juicy and sticky. All in all a super easy recipe, I’ll be making again.

This rack of pork ribs has been sitting in our deep freezer for months since we bought half a pig from a local guy at a nearby farm last fall.

His pork has been some of the best I&rsquove ever tasted so I really have no idea why it took me so long to finally decide to cook these ribs.

As we move closer to fall, I wanted to find a way to give the ribs a different spin than your typical summer BBQ sauce glaze.

Poaching the ribs in the apple juice and maple syrup gives the flesh a slightly sweet taste that&rsquos highlighted by the sticky maple apple glaze slathered on top as they finish off in the oven.

So many times ribs call for brown sugar either in the rub or the glaze but combined with the apple juice, maple syrup brings a much deeper, almost caramel type flavor to the recipe.

I love that it also shows off its versatility as more than just a topping for sweet baked goods.

A platter of this pork would be a welcome addition at any summer occasion. Serve with leaves, a roast potato salad or the Caesar pea salad below. Anchovies are an important addition to this Caesar dressing as they add the rounded, salty kick it needs.

First, make the Caesar dressing. Put the egg, anchovy fillets, Worcestershire sauce and lemon juice in a mini food processor and process until just combined. With the motor running, gradually add the rapeseed oil and process until thick and creamy. Season with salt and pepper and add a little water if you find the dressing a little thick.

Before the pork has finished cooking, transfer the dressing to a mixing bowl and toss together with the peas, lettuce and parsley.

Melt the butter with the oil in a large frying pan over a high heat. Pat the pork chops dry with a little kitchen paper and season with sea salt and ground black pepper. Add the chops to the pan and brown on both sides.

Step 1

Heat some oil in a frying pan at a medium/high heat, cook your pork chops on one side for 4-5 minutes.

Step 2

Flip the chops then add your Apple, onion and thyme to the pan. Cook for a further 4-5 minutes. Remove the chops and cover with foil to rest.

Step 3

Continue to cook the apple and onion for a further few minutes. Mix the water syrup and stock cube together and pour in with the apple.

Step 4

Cook the mixture down a little until it begins to thicken. Add the chops back in and coat with the sauce.
