Ingredients

  • 1/2 cup plus 1 tablespoon sugar
  • 1 1/2 tablespoons instant espresso powder
  • 1/2 teaspoon vanilla extract
  • 3/4 cup chilled heavy whipping cream
  • 1/4 teaspoon ground cardamom

  • Bring 1/2 cup water and 1/2 cup sugar just to simmer in heavy small saucepan over medium heat, stirring mixture constantly until sugar dissolves. Stir in instant espresso powder and vanilla extract. Remove saucepan from heat; stir in remaining 1 1/2 cups water. Pour into 9x9x2-inch metal baking pan. Freeze mixture 1 hour; stir, mashing any frozen parts with back of fork. Cover and freeze mixture until firm, at least 1 to 2 hours longer and up to 1 day. Using fork, scrape granita, forming icy flakes. Return granita to freezer.

  • Beat cream, cardamom, and remaining 1 tablespoon sugar in large bowl until peaks form. Divide granita among bowls or glasses. Top granita with whipped cream.

Mmmm, coffee granita reminds me of my trip to Rome years ago when I happened upon Tazza d’Oro near the Pantheon. They made the BEST coffee granita (well, the first one I had ever tried) and they topped it with the perfectly whipped cream. It was so delicious and it was Italy…I mean, c’mon! The urge to find a replacement for it didn’t hit me until recently. Granita is one of those things that is pretty easy to make. It’s elegant and perfect now that our Bay Area “summer” has arrived.

And then there’s the Philz twist: How about coffee granita with cardamom whipped cream? Sounds like a frozen Tantilizing Turkish or Philharmonic blend…delicious!

Coffee Granita with Cardamom Whipped Cream
This recipe is from Bon Appetit’s April 2010 issue.

Ingredients
* 2 cups water, divided
* 1/2 cup plus 1 tablespoon sugar
* 1 1/2 tablespoons instant espresso powder
(instead of using espresso powder, try making a really strong brew of Turkish or Philharmonic)
* 1/2 teaspoon vanilla extract

For the granita
2 cups freshly brewed coffee, warm
5 tablespoons sugar

3/4 cup heavy cream
3 tablespoons sugar

Pour into moulds and place in the freezer for at least four hours, for best results, freeze overnight. Alternatively, pour into a freezer-proof bowl, cover tightly with plastic wrap and freeze until frozen, before scooping into waffle cones.

Milky chai granita

Ingredients

2 cups milk (or unsweetened almond milk)

10cm knob of ginger, roughly chopped

3 whole cinnamon sticks, lightly pounded

1 heaped tbsp freshly ground cardamom

5 whole black peppercorns

4 to 6 black teabags (depending on strength of tea)

In a large pot, add all ingredients except the teabags and sugar. Turn heat to medium-high and bring to a rolling boil. Add the tea bags and immediately remove from the heat and allow to steep for at least five minutes (if you like a stronger tea flavour, allow to cool completely before removing the teabags).

Pour the mixture through a fine mesh sieve into a large bowl and stir through sugar to taste and until thoroughly dissolved. Pour the mixture into a shallow tray (this makes scraping it much easier), allow to cool then place in the freezer for at least three hours or until the edges are starting to freeze.

Working quickly with a fork, scrape across the top of the mixture to make a grated ice. Return to the freezer and repeat this process two to three times, or until you can scrape ice flakes from the entire tray.

Spoon granita into individual cups and serve immediately.

Icy caramel latte

Ingredients

2 shots espresso (60ml), cooled

1 cup good quality dulce de leche caramel (available from specialty grocers such as Essential Ingredient, or make your own)

½ cup roughly crushed chocolate covered coffee beans for dipping (optional)

Add the cream and half the milk to a bowl. Stir through the icing sugar and set aside.

Add the remaining half of the milk and espresso to a bowl and stir until thoroughly combined. Set aside.

If the caramel is thick, warm it slightly in the microwave until you get a running/ribbon consistency. Pour two tablespoons of caramel into the base of each ice-cream mould and place in the freezer to harden for 20 minutes. It doesn't need to fully set, but should be firm enough so you can create layers.

Pour over the espresso layer until moulds are two-thirds full. Return to the freezer until just set.

Pour the cream mixture on the top and return to freezer overnight to freeze completely. When ready to serve, pull moulds from the freezer, turn out ice-creams (see tip above) and serve immediately.
